Mexican Crab Salad


 This recipe is made with imitation crab.
 Imitation crab is made from a fish called 'Pollock' which is flavored to taste like crab.
 I had to look this up a while back, the name imitation crab is well intimidating! Haha!
This is also used in California rolls.

RECIPE:
2lbs Imitation Crab meat
4-5 small cucumbers (diced)
4 Roma tomatoes (diced)
1/2 red onion (minced)
half bunch of cilantro (chopped)
*4-5 Serrano peppers (optional)
2 avocados (diced) 
4 lemons (juiced)
Salt to taste

Shred the imitation crab meat, chop all the veggies. Combine together, add lemon juice & salt. 
Allow it to sit for 1-2 hrs. before serving.


Serve on a pretty platter..


Enjoy with a tostada, crackers, over a green salad or on its own.. I usually add tapatio to mine!! Yum!!

Cold Quinoa Salad

Give this a try, so easy, healthy & delish!!

RECIPE:
2 cups cooked Quinoa
(Cook accordingly)
1 pkg. cherry tomatoes (halved)
3-4 small cucumbers (diced)
1/2 red bell pepper (diced)
1/2 yellow bell pepper (diced)
4 slices red onion (slices)
handful of parsley (chopped)
Fete cheese *optional

Cook the quinoa according to package directions. Allow to cool completely.
Chop all the veggies!


Place the cooled quinoa in a large bowl.. 


Chop up the parsley..


Vinaigrette:
1/2 lemon (juiced)
1/4 olive oil
Salt & pepper (to taste)

Add lemon juice & olive oil into a small bowl, season with salt & pepper 
& whisk together until it creates a thick vinaigrette.



Add your veggies & parsley to the quinoa as well as the vinaigrette. Mix to combine.
 Top with feta cheese or not!


Serve!


The following day I added feta, sooooo good!!

Stuffed Mushrooms

Delicious, eye catching & easy!

RECIPE:
3 boxes of button mushrooms
2 Tb (chopped) Parsley
2 Tb grated Parmesan cheese
1 garlic glove
1 Tb butter

Preheat oven at 375 degrees.
Wash your mushrooms, removing all the dirt. Allow to dry. Removed the stems, by gently tugging on it with your hand. It should come right off & for those stubborn stems, use a butter knife.


Once you have all your stems removed, chop them up finely. Heat up a skillet & add a Tb of butter & the garlic. Sauté for 1 min. Add chopped stems in & sauté until tender for about 3-4 mins, fianlly add parsley & cheese to combine. Turn heat off. Your stuffing is done!!
Place mushrooms on a baking sheet & 1 by 1 spoon in less then a 1/2 tb of filling.
 Place in the oven & bake for 25 mins.

Remove & place on a cute platter!!

Bacon wrapped Jalapeños Poppers

Jalapeño poppers are very popular right now!

 To be honest I had yet to try some homemade Jalapeño poppers. Everyone raves about them, so I knew they had to be delicious. I used Pioneers Women's recipe. (If you don't know her, look her up. She's amazing!) When I read the recipe, the cream cheese filling alone didn't appeal to me. So I added some pepper jack cheese to the mix.
I knew it would give it an extra kick! Let's get started!

RECIPE:
20 fresh Jalapeños
2 pks. Cream Cream (room temperature)
1/2 lb of Pepper Jack cheese
1-2 pks. of Bacon

*This recipe makes 40 poppers, if you make half the recipe 1 pk of bacon & cream cheese is plenty.

Preheat oven at 375 degrees.
Wash & slice your jalapeño lengthwise & remove the seeds.

 In a bowl combine the cream cheese & the shredded pepper jack cheese.


Spoon on some mixture in the jalapeño cavity. Fill all of your peppers.


Cut your bacon into 3 portions & begin to wrap each pepper. 
 (Pioneer women suggests using toothpicks to secure the bacon, I feel it's fine without)
 I tested half with toothpicks & half without ... they both came out the same!


Place left on a baking rack with a baking sheet underneath for drippings.
(I felt the baking rack really allowed the bacon to crisp up nicely & all the extra grease dripped away.)


Bake for 25-30 mins (top rack)
Remove & place a flat serving platter!


They are sooooooo delicious, some extra spicy & some not. Good luck! My sister & I were glad we added the pepper jack cheese, it changed the texture a bit & gave these an extra pop!
I can't wait to make these again.

Chicken Soup w/ Rice & Garbanzos

I finally came around to making my family some good chicken soup.
 Hope you enjoy!
 I know some will ask or maybe not.. Why I used chicken breast??? Really want to know :) ... okay if I'm going to shred chicken, this is what I use 90% of the time. For the reason that I really dislike shredding the unpleasant parts of the chicken & I just don't want to deal with it! If you ask my mom, she'd use a leg, thigh, liver, breast, heart, back bone... pretty much the whole chicken.
Some people like the dark meat some don't. Let's remember that in my kitchen I make the rules & I will always alter recipes to my liking. Haha! Let's get started.

RECIPE:

3QT Pot
Enough water to fill the pot 3/4 of the way up
1 boneless chicken breast
1/4 onion
1 garlic
1 TB salt
1 can garbanzos (peeled)
2-3 handfuls of rice

For the tomato mixture(aka- the flavor): 3 roma tomatoes (chopped), 1/4 onion (chopped), 1 garlic (chopped) & 1 Tb chicken bouillon or one cube. Set aside.

Place chicken in a large pot of water, add 1/4 onion, 1 garlic & 1 Tb salt. Bring to a boil.


When it begins to boil & foam begins to accumulate, it must be removed.


In a small pan or sauce pot, saute your chopped onion & garlic until translucent. Add tomato and cook down. Season with chicken bouillon.


Smash until tomato is broken down. Turn heat off.


After 35-40 minutes the chicken breast should be cooked through. Take out & shred. At this point you should also discard the onion & garlic from the broth.


Drain & peel your garbanzos & throw into your broth,
grab 2-3 handfuls of rice & throw in.(wow... Manicure alert below! Sorry!)
 Please excuse my measuring technique for the rice.




Dump in your tomato mixture & stir to combine.(Taste for seasonings) 
Cover & cook for another 15 mins until rice is tender.



This made enough for 4 with seconds & some leftovers. 


Serve....


If you like the heat... chop some serrano peppers & add to your bowl!

Roasted Asparagus with a Sprinkle of Parmesan cheese

I love asparagus!! Try this recipe with or without the Parmesan cheese. 
This is always a great side dish.

Preheat your oven at 400.
Wash the asparagus & drain. Cut off about an 1 inch or so from the bottom. Some say snap of the bottoms & that's how much you discard, I never listen. Opps! Arrange your stems in a flat baking dish. Sprinkle with extra Virgin oil olive, bit of salt/ pepper & some Parmesan cheese. (A light sprinkle, just for flavor)
Make sure your oven is heated through. The secret for perfectly roasted asparagus (crispy stems that don't bend) is a well heated oven.

Place inside your oven, top rack for 10 mins. Take out & serve!
