Thyme & Lime Salmon

3-4 Salmon steaks (1 per person)
Couple stems of Thyme (remove stems)
1 lime
1 garlic clove (minced)
Salt & pepper
Pinch of paprika for color

Pat dry salmon steaks & season with salt & pepper. 
Add minced garlic, Thyme & paprika. Pat flavors into the salmon.

Preheat skillet to a medium high, add olive oil & place salmon herb side down.

Sear for about 5-6 mins (covered) & gentle flip. Cook another 2 mins (uncover).
 Turn heat off & squeeze half a lime & serve.

Roasted Veggie & Shrimp Linguine

This "experimental" dish just came to be one afternoon.. & man was it delicious! It worked, the ingredients married one another & not to mention it was pretty simple to execute. Hope you enjoy!

RECIPE:
1 lb. linguine pasta
2 cloves of garlic (thinly sliced)
3 garlic cloves (minced)
2 lbs shrimp
1 red bell pepper (quartered)
1 yellow bell pepper (quartered)
2 zucchini's (quartered)
1 pkg. of cherry tomatoes (halved)
1 red onion (sliced into chucks)
Parsley (chopped)
Parmesan cheese

Preheat oven at 400.
Place all veggies on a baking sheet & drizzle with olive oil, salt & pepper. Add sliced garlic on top & mix to combine seasonings. Roast at 400 degrees for 25 minutes or until veggies are slightly tender. Next place shrimp on a baking sheet, add olive oil, paprika, salt, pepper, garlic (minced). Place in the oven during last 10 minutes before the veggies are done. Make sure shrimp is placed on the top rack.

Meanwhile, cook pasta accordingly, drain & set aside. (Reserve 1/4 pasta water)

Prepare a large mixing bowl or pot to combine all ingredients.

Take both veggies & shrimp out of the oven. Add to pasta, along with the reserved water & combine.
 Finish with parsley & your desired amount of Parmesan cheese. 


Serve!!!


This meal may require a ton of dishes, but the actual preparation is simple! Don't be intimated! 
Let someone else wash the dishes!!

Chicken Piccata

This is dish is sooo delicious, I cannot stress that enough. Try it out! A few years back my aunt shared this recipe with my mom & we've been making it ever since.

RECIPE:
1 lb chicken breast (skinless/boneless)
1/4 cup of flour
Salt & Pepper (to season chicken breast)
Olive oil
2 garlic clove (minced)
2 TB of capers (drained)
1 package of Mushrooms (quartered or sliced)
1/2 cup of chicken stock
1/2 white wine (your choice)
2 Tb of lemon juice
1 Tb of butter 
Fresh Parsley (chopped)
 
Let's get started...  butterfly your chicken breast, you want thin steaks. Season the chicken with salt & pepper. On a large plate add flour, & drench the chicken in flour, pat excess off. Set aside.
 
  

I choose to quarter my mushrooms..
 

Chop your fresh parsley & garlic cloves..
 

Heat up a large saute pan & sear each chicken steak until brown. Remove each steak from pan after they are cooked. About 4-5 mins per side.


In the same pan add the garlic & saute for 1 mins. Add mushrooms & brown for about 3 mins. Lastly add in the stock, wine, lemon juice, capers, & butter. Stir to combine & bring to a low simmer. 
 

 Add chicken steaks back in, leave for a minute or 2 & turn heat off. Garnish with fresh parsley.



 You can serve as is or over your favorite pasta. I love angel hair with this dish! 


 A glass of wine is a must!!

Veggie Lasagna

 I made this last month for my "Girl's Valentine's Day Gathering" aka 
an excuse to gossip & drink!


 A few of the details..

 This was inspired by a frozen lasagna my mother in law sometimes makes. It's pretty good & I knew I could master a homemade version. One of my guest is also vegetarian & I wanted her approval. 
Approval granted, she loved it. Let's get started.

RECIPE:
10 cooked lasagna noodles (drained & set aside)
2 small heads of Broccoli (chopped into tiny bite size pieces)
Spinach  (8 oz. frozen pkg.)
6-8 Mushrooms (chopped)
1 Garlic clove (minced)
Part skim Ricotta (15oz. container)
2 eggs
Mozzarella

Boil water & cook lasagna noodles accordingly.
Heat up a saute pan, add some olive oil & garlic, cook the broccoli florets for about 4 mins. 
Add mushrooms & spinach, cook another 2 mins. Turn heat off & pour mixture into your heat resistant mixing bowl & allow to slightly cool. You will then add the entire container of ricotta, the mozzarella (about 1 cup), eggs, & some more Parmesan. 
I felt my filling lacked in the sodium department, so I added 1 tsp of salt as well. (I'm not a salty person)
Combine all ingredients!


For the White sauce or Bechamel: 
{This sauce is a Rachel Ray recipe, only one I've used & love}

2 Tb. of butter
2 Tb. flour
2 cups of milk
a pinch of nutmeg
*1/2 tsp of garlic powder
*1/4 cup of Parmesan cheese
Salt & pepper to taste 

** Additional ingredients I add!

Melt butter in a small pot, with medium heat. Whisk in flour until slightly brown, about 1 min. Stir in milk & remaining ingredients & allow it to bubble. Cook for about 5 mins until it thickens & reduces. 
Turn heat off & set aside.


Drain pasta noodles, lay out flat.
In a baking dish apply a layer of bechamel sauce to the bottom.
Apply about 1/4 cup mixture to the noodle & spread evenly. Add more mixture if needed. Beginning on one side, roll the noodle slowly, making sure the filling stays put. Now carefully place the roll in your baking dish.


In this picture I missed the step of adding the thin layer of sauce, opps! Start over!


Okay!! After all the lasagna rolls are done. Spoon some of the white sauce over each roll & top with mozzerella cheese. Cover with foil & bake for 35 mins at 350 degrees.
 (I uncovered the dish the last 5-10 mins to allow the cheese to brown)


The Lasagna Rolls turned out delicious & my guest really enjoyed them. 
I felt these were perfect for a party, each guest grabs a roll without the fuss of cutting in squares. 
Don't get me wrong I LOOOVE lasagna, but it was a nice change.

Grilled BBQ Chicken Skewers

RECIPE:
4 skinless/ boneless chicken breast (cut into long strips) about 3-4 per breast
Skewers (soak about 30 mins)
Seasoning salt
BBQ sauce (your choice)

Garnish with chopped cilantro & thinly sliced red onion!!


Slice your chicken into long strips, skewer them on.. Add some oil & season with seasoning salt.
Grill until each piece is cooked thru. (About 3-4 per side) Take the skewers off the grill, pour your favorite BBQ sauce all over & place back on the grill for 2mins. 
Lastly, throw some chopped cilantro & onions on top (this really adds great texture & extra flavor)!
 Done!! Perfect for a main dish or appetizer!

Mexican Crab Salad


 This recipe is made with imitation crab.
 Imitation crab is made from a fish called 'Pollock' which is flavored to taste like crab.
 I had to look this up a while back, the name imitation crab is well intimidating! Haha!
This is also used in California rolls.

RECIPE:
2lbs Imitation Crab meat
4-5 small cucumbers (diced)
4 Roma tomatoes (diced)
1/2 red onion (minced)
half bunch of cilantro (chopped)
*4-5 Serrano peppers (optional)
2 avocados (diced) 
4 lemons (juiced)
Salt to taste

Shred the imitation crab meat, chop all the veggies. Combine together, add lemon juice & salt. 
Allow it to sit for 1-2 hrs. before serving.


Serve on a pretty platter..


Enjoy with a tostada, crackers, over a green salad or on its own.. I usually add tapatio to mine!! Yum!!

Cold Quinoa Salad

Give this a try, so easy, healthy & delish!!

RECIPE:
2 cups cooked Quinoa
(Cook accordingly)
1 pkg. cherry tomatoes (halved)
3-4 small cucumbers (diced)
1/2 red bell pepper (diced)
1/2 yellow bell pepper (diced)
4 slices red onion (slices)
handful of parsley (chopped)
Fete cheese *optional

Cook the quinoa according to package directions. Allow to cool completely.
Chop all the veggies!


Place the cooled quinoa in a large bowl.. 


Chop up the parsley..


Vinaigrette:
1/2 lemon (juiced)
1/4 olive oil
Salt & pepper (to taste)

Add lemon juice & olive oil into a small bowl, season with salt & pepper 
& whisk together until it creates a thick vinaigrette.



Add your veggies & parsley to the quinoa as well as the vinaigrette. Mix to combine.
 Top with feta cheese or not!


Serve!


The following day I added feta, sooooo good!!

Stuffed Mushrooms

Delicious, eye catching & easy!

RECIPE:
3 boxes of button mushrooms
2 Tb (chopped) Parsley
2 Tb grated Parmesan cheese
1 garlic glove
1 Tb butter

Preheat oven at 375 degrees.
Wash your mushrooms, removing all the dirt. Allow to dry. Removed the stems, by gently tugging on it with your hand. It should come right off & for those stubborn stems, use a butter knife.


Once you have all your stems removed, chop them up finely. Heat up a skillet & add a Tb of butter & the garlic. Sauté for 1 min. Add chopped stems in & sauté until tender for about 3-4 mins, fianlly add parsley & cheese to combine. Turn heat off. Your stuffing is done!!
Place mushrooms on a baking sheet & 1 by 1 spoon in less then a 1/2 tb of filling.
 Place in the oven & bake for 25 mins.

Remove & place on a cute platter!!

Bacon wrapped Jalapeños Poppers

Jalapeño poppers are very popular right now!

 To be honest I had yet to try some homemade Jalapeño poppers. Everyone raves about them, so I knew they had to be delicious. I used Pioneers Women's recipe. (If you don't know her, look her up. She's amazing!) When I read the recipe, the cream cheese filling alone didn't appeal to me. So I added some pepper jack cheese to the mix.
I knew it would give it an extra kick! Let's get started!

RECIPE:
20 fresh Jalapeños
2 pks. Cream Cream (room temperature)
1/2 lb of Pepper Jack cheese
1-2 pks. of Bacon

*This recipe makes 40 poppers, if you make half the recipe 1 pk of bacon & cream cheese is plenty.

Preheat oven at 375 degrees.
Wash & slice your jalapeño lengthwise & remove the seeds.

 In a bowl combine the cream cheese & the shredded pepper jack cheese.


Spoon on some mixture in the jalapeño cavity. Fill all of your peppers.


Cut your bacon into 3 portions & begin to wrap each pepper. 
 (Pioneer women suggests using toothpicks to secure the bacon, I feel it's fine without)
 I tested half with toothpicks & half without ... they both came out the same!


Place left on a baking rack with a baking sheet underneath for drippings.
(I felt the baking rack really allowed the bacon to crisp up nicely & all the extra grease dripped away.)


Bake for 25-30 mins (top rack)
Remove & place a flat serving platter!


They are sooooooo delicious, some extra spicy & some not. Good luck! My sister & I were glad we added the pepper jack cheese, it changed the texture a bit & gave these an extra pop!
I can't wait to make these again.
