Organic Salad Mix topped with Spicy Salmon


This is my favorite go to salad, super flavorful & filling.
 
Ingredients:
1 Salmon steak per person
1/2 to 1 cup cooked Quinoa
1/2 onion (sliced)
2 Jalapenos (sliced)
Salad mix
1 Lemon
Salt & Pepper
 
Let's get started, cook about 1/2 (2 servings) to 1 cup (4 serving) of quinoa. Meanwhile season the individual portioned salmon steaks with salt & pepper, set aside. Slice 1/2 onion, 2 Jalapenos & in a medium sauté pan heat up a Tb of olive oil & cook for 4-5 minutes. Move onion and chilies to the outer edges of the pan, place salmon seasoned side down to brown. Remember to only flip once, cook about 5-6 minutes per side (or until desired readiness). Turn heat off. Now to assemble your salad... I used a combination of organic kale, spinach & Swiss chard salad mix, lay a bed of this on your plate, spoon on a good portion of quinoa (1/2 cup cooked) & top with a portion of salmon & the onion pepper mix. The dressing for this salad is very complicated.... Lemon wedges! Enjoy!

Roasted Salmon with Rosemary & Garlic


Preheat oven at 400.

Season salmon with salt & pepper, set aside.
In a small bowl place chopped  fresh rosemary (about 2 Tb) & 2 minced garlic cloves.
Add 2 Tb of olive oil & mix. Spoon mixture onto each salmon steak. 

Roast for about 10 minutes uncovered.

Habanero/Jalapeño Salmon

This is my family's favorite way to make Salmon, everyone I've introduced this recipe to
LOVES IT!!

RECIPE:
Salmon steak
Salt, pepper & garlic powder
Onion (sliced)
!-2 Jalapeño (sliced)
1 Habanero (sliced)

Season the salmon with Salt, freshly ground pepper & a pinch of garlic powder.
Pre-Heat a skillet to medium high & add some grape seed oil.


Saute the peppers & onion until they become semi-soft (about 5 mins)


Make room for the salmon by moving peppers to the sides of the skillet,
 place salmon in carefully & arrange the peppers on top, cover (4 mins).


Again take peppers off the salmon & gently flip, re-arrange the peppers on top.
If you do not move the peppers they will burn before the salmon in fully cooked (trust me). By placing the peppers on top the salmon absorbs the heat faster, beware. Haha!


After about a minute or so, take the salmon out & plate. In the past I've made white or brown rice along with & a side of steamed veggies. This time I decided to place on top of an organic mixed green salad & man was it delicious. I drizzle my salad with a bit of lemon juice & olive oil.

Thyme & Lime Salmon

3-4 Salmon steaks (1 per person)
Couple stems of Thyme (remove stems)
1 lime
1 garlic clove (minced)
Salt & pepper
Pinch of paprika for color

Pat dry salmon steaks & season with salt & pepper. 
Add minced garlic, Thyme & paprika. Pat flavors into the salmon.

Preheat skillet to a medium high, add olive oil & place salmon herb side down.

Sear for about 5-6 mins (covered) & gentle flip. Cook another 2 mins (uncover).
 Turn heat off & squeeze half a lime & serve.

Roasted Balsamic Glazed Salmon

For a while now I've been craving a teriyaki glazed salmon,
  unfortunately for me I didn't have the right ingredients. 

However, a few weeks ago my father in law gifted me a set (which included Wine, olive oil & a balsamic vinegar). My inner light bulb went off! Not knowing what the outcome would be, I began searching the web for balsamic glazed salmon recipes. Soon enough I came across this one, I altered the glaze a bit using less than half the amounts called for. For me it came out just perfect, the right amount of glaze, not over powering the actual salmon. The balsamic makes the salmon somewhat sweet, it slightly resembled a teriyaki flavor. Although not as sweet. Hope you enjoy this as much as we did. 
My youngest isn't very fond of salmon & she loved it.

RECIPE:
3-4 Salmon Steaks (1 per person)
Salt & pepper
Olive oil

Pat Salmon steak dry & drizzle olive oil & salt/ pepper. Set aside. Now let's prepare the glaze!

Balsamic Glaze:
1/4 cup Balsamic Vinaigrette
1 Tb Maple syrup
1 Tb Dijon mustard
1 garlic clove (minced)

Place all ingredients in a small sauce pot & simmer on low for 10 mins. Allowing the favors to combine & sauce to thicken. Stir frequently because the sauce can easily burn.


Place salmon on a baking sheet. Spoon sauce onto each piece, covering the top of the salmon. Bake Salmon at 375 degrees 15 minutes (depending on your oven). Until the side of the salmon looks thoroughly cooked.


Take out & serve! (Serve over rice & your favorite veggies.. 
(If your eliminating carbs from your diet, serve directly over veggies. Remember salmon packs a good nutritional value.)

Salmon & Potato Cakes

Crab cakes are so yummy right??
 I never buy fresh crab, so I used Fresh Salmon instead. Came up with this recipe one day I had no idea what to make for dinner & it was an instant hit. I've made this many times, despite the
 ingredient list, they're fairly easy. Not to mention Delicious!!
I've only made this remoulade recipe once & really enjoyed the flavors.


RECIPE:
(serves 4)

1/2 - 1 lb. Fresh Salmon (cut into even steaks)
2 large potatoes (cube)
1/4 onions (finely diced)
Fresh Thyme
Salt & Pepper

Coating:/Crust:
Flour (eyeball)
Egg wash (1-2 eggs & splash water, stir)
Panko Breadcrumbs

  1. Cube potatoes and place in a pot with salted water to boil. About 15mins or until tender.
  2. Drain and Set aside.
  3. Season Salmon with Salt & pepper (Pre-heat large skillet)
  4. Diced onion, add grape seed oil to skillet and saute 2 mins (until translucent).
  5. Add Salmon steaks and saute about 5-6 mins per side.
  6. Transfer Salmon & onions to a large glass bowl, add potato, thyme, and smash to combine.
Assembly Line:
1 plate egg wash, 1 plate breadcrumbs, & Salmon mixture.
**Pre heat large skillet & add Grape Seed Oil
Begin forming Salmon cakes (about the size of a palm or your preference)
  • Dip in egg wash
  • Dip in breadcrumbs
  • Add 3 to 4 Cakes to skillet and brown on both sides (2-3 mins. per side)
  • Set on a paper towel to allow excess grease to drip

Simple Remoulade Sauce:
(white sauce photographed)

1 Tbsp chopped fresh parsley
2 Tbsp finely chopped scallions
2 Tbsp finely chopped sweet pickles (or relish)
dash garlic powder
1/2 cup mayonnaise
1 Tbsp olive oil
2 teaspoons lemon juice
1 teaspoon Dijon mustard
few drops Worcestershire sauce
pepper, to taste

Combine all ingredients in a small bowl & allow to set in the frig. for 1 hr.
This sauce really brightens up the Salmon Cakes. A relative of mine who's an amazing
 Chef suggested it, he was right! (No more ketchup) 

Serve with Your favorite Salad.

Baked Salmon with Fresh Herbs

Eat those Omega-3 Fatty acids.. from where?? From good old Mr. Salmon :)
Our friend here has 6 major health benefits from outer body to Cardiovascular health benefits. (Sorry for the health class, but after all I'm still a prospective Nursing student) soooo EAT up!

I have yet to show case my garden HERB collection (made up of 4 types) YES only four, however, four that I'm very proud of.... I'm the mother to Basil, Lemon Thyme, Parsley, and Mint Plants.
In this recipe I wanted to incorporate all my fresh herbs together in one dish 
(most recipes out there only included 2 herbs) and the end result -->
Mr. Salmon went to Flavor Town!
It was DIVINE (new fav. word :-p)

Parsley, Lemon Thyme, Basil, Mint

Baked Salmon with Fresh Herbs
RECIPE:

2 large garlic cloves (minced)
2 Tb. Parsley
2 Tb. Lemon Thyme
2 Tb. Basil
1Tb. Mint
Juice of half a Lemon
Olive oil
1 Tb. of unsalted Butter *optional
Salt & Pepper

Chop all herbs finely and place in a small bowl, add minced garlic, lemon juice, olive oil and COMBINE.


Cut Salmon into even portions and season with Salt & Pepper.

Arrange in a Baking Dish
Spoon HERB mixture over each Salmon fillet & top with a tiny square of butter*


Place Salmon in a Pre-Heated oven @ 350 degrees for 40 minutes


ENJOY!
* I served this with Brown Rice & Black Beans
(If your making brown rice, begin cooking after you place Salmon to bake)
