Tequila Shrimp Tacos

These tacos consist of 2 ingredients I LOVE LOOVE LOVE! 
SHRIMP & TEQUILA!!
I've come across recipes for tequila shrimp tacos before, but I wanted something fast & easy.
SO.. This is what I came up with..

RECIPE
1 lb. medium shrimp (peeled & deveined)
1-2 shots of tequila
1 garlic clove (minced)
1 TB butter
Salt & Pepper

Heat up a large skillet... add some grape seed oil & garlic. Saute for about 1 min. & add shrimp!
Season with 1/2 TB of salt & pepper


Cook until shrimp have turned pink & liquids have adsorbed.
Bring your favorite tequila & take a shot yourself! Why not! (or not) haha.
Stand back & add a shot of tequila (heat should be high)

Once tequila is adsorbed, add 1 tb of butter & another shot if you enjoy a stronger tequila taste.


Once shrimp has slightly caramelized. Turn heat off & your done!


 Warm up a few tortillas... Add your Mexican slaw, top with shrimp & your favorite spicy salsa!

Hard Shell Turkey Taco's

A healthier alternative to my favorite fast food... TACO BELL!
Picked up Ground Turkey, Whole wheat hard shells & made a fresh salsa.

RECIPE:
1 lb. ground Turkey meat
8 Hard shells (whole wheat)
1 pk. Taco Seasoning (less sodium)
Your favorite fresh salsa
Ice burg lettuce (chopped)
Cheddar Cheese


Brown the ground turkey in a large skillet, add the taco seasoning & water (instructions on package)..


make a simple salsa or Pico de Gallo..
add an Habanero pepper for a KICK!!!!

Assemble the tacos.. meat, lettuce (not pictured) , cheese & top with fresh salsa!
Easy enough...
After he <3 ate his tacos.. I told him it was turkey & whole wheat shells.. haha! He said it was good!

Slow-Cooked Pork Tacos

I made these tacos over the summer... & I've been dying to share!
 If you are familiar w/ "Barbacoa" (mexican meat dish) This pork has a very similar flavor... very Yummy!


RECIPE:
5-6 Whole Pasilla chiles
4 garlic cloves (peeled)
1/2 medium onion
3 Tb oil
1 TB honey
1 Tb Cider Vinegar
2 tsp Dried oregano
3 3/4 Cups (low sodium) Chicken stock
1 Bay Leave / 1 Cinnamon Stick
3-4 lbs. Pork lion (untrimmed)

1. Put pasilla chiles & garlic in a bowl.. microwave for 2 mins. (Stem & seed). Transfer to of oil to a blender.

2. Add onion, olive oil, honey, vinegar, salt & oregano .... Puree until smooth!

3. Add 1 Tbsp a large skillet & heat over high heat, add chile sauce & fry until thick. (about 8mins)

4. Add chicken broth & reduce heat.

5. Season pork all over with salt & pepper.. chuck into large chunks -- add to your slow cooker!

6. Add bay leaf & cinnamon stick & pour in sauce.

Cook for 5 hours or until tender... or Cook in the oven for 1 hour @ 350 degrees covered, then uncovered for 30 mins more. Remove from slow cooker or oven & shred pork with a fork. Warm up tortillas & make TACOS!!
Suggested Toppings: Cilantro, purple cabbage, limes, queso fresco, sliced onion... etc.

Crispy Tacos


Mid-week blues... tried of meat/ chicken/ pasta!
Try these Simple CRISPY... YUMMY... DELICIOUS.. taco's !

Potato Stuffed Taco's
             RECIPE:

 2 large Potatoes (cut into large chunks)
1/4 cup of Mozzarella cheese
1/2 tsp. dried oregano
Salt (to taste, about a 1TB. to boiling water)



  • Place Potatoes in a large pot with enough water to cover them & add salt. Bring to a boil, simmer for about 15 minutes (or until Potatoes are fork tender).
  • Drain water add cheese & oregano, bring out your smasher & smash away!
  • You want the consistency of dry mash potatoes. Set aside.

Refried Bean Stuffed Taco's
        RECIPE:
** You have left over beans?? (follow my easy refried beans recipe)
You may add chorizo to refried beans, gives tacos an added KICK!

OK! You have prepare both the potato and bean stuffing, now the assembly begins!
  • Warm Tortillas, begin spreading beans/ potato on one half & close
Spread Mixture on one half
STACK 1: Beans / STACK 2: Potato

FRIED

  • Once you filled each tortilla with both stuffings, heat a large skillet! Begin frying 3-4 tacos at a time until crispy golden brown. (Oil must be hot or else taco's absorb to much oil.. I use Grape Seed Oil)
  • Make sure you have a plate with a napkin ready to place tacos & allow ALL excess oil to drip away!

Easy Tomato Salsa
RECIPE:
1 large Tomato or 2 Roma Tomato's
2 Jalapeno Peppers
1 garlic clove
Splash of Pickled Jalapeno Juice
Pinch dried oregano
Salt & Pepper ( to taste)

Boil Tomato & Peppers until Jalapenos are tender.
Place veggies, garlic, oregano, splash of pickled jalapeno juice & seasonings in a blender & BLEND!

**Non-Spicy "Kid-friendly" Salsa.. omit Jalapeno peppers!!




Suggested Toppings:
Tomato Salsa
Queso Cotija (Salty Mexican cheese)
Avocado



Eat 1 of each, 2 of each... or if your like me 3 of each ;)
