Egg Cupcakes

You don't need a plate nor fork! 
Eat them at home or on your way to work! That's the beauty of these! Give them to your kids in the morning on the way to school! Do you have a brunch to attend? Make these & transport them with no problems!
Can you tell I love eggs? haha

RECIPE:
6 eggs
1 potato (chopped small)
1 Jalapeno (diced) *optional
1 Tomato (chopped)
2 slices of onion (diced)
Colby cheese
Salt & Pepper

{Makes about 8 cupcakes} Depending on the eggs you use, you'll get 2 or so extra.
Eggs & potatoes are always a match made in heaven. Play around with your own ingredients.

Pre heat oven at 350.
Heat up a large skillet, add olive oil & potatoes. Cover & cook until tender. This may take a while. Finally add onion & tomato. Cook for another 3 mins. Turn heat off! Set aside!
In a bowl combine eggs, a splash of milk, & a bit of cheese.
Butter about 8 cupcake molds!
Add egg mixture to your skillet & combine.
Begin filling each cupcake mold & top with cheese. If your adding jalapeƱo remember which ones! Bake for 15 mins. Until golden. Take out of the oven & allow to cool!

Tip: Add anything you want to these, cooking steps are the same!!

Broccoli Frittata

RECIPE:
1 small head of broccoli (chopped small)
1 tomato (chopped)
2 slices of onion (chopped)
1 garlic clove (minced)
5 eggs
about 1 cup or so of cheese 
(I used an Italian Blend, Parm, Romano, Fontina & mozzerella)

 When I decided on making a Frittata.. I checked my refrigerator to see what veggies I had on hand. Went from there. This should feed about 3-4 people. Chopped my broccoli, tomato, onion & garlic. Preheat oven at 350. 
Heat up a large skillet & add some olive oil. 
Add your onions & garlic, cook until translucent or about 4mins. Add broccoli, season with salt & pepper, cook until almost tender. About 5 mins.


 In a bowl combine 5 eggs, a splash of milk, a bit pepper. Set aside.

Finally add the tomatoes & cook for 1 min. Turn heat off.
 

Add some cheese to your egg mixture & combine. Butter a round baking dish, add some eggs & all the veggies, top with the remaining egg mixture & cheese. Cover & place in the oven.







Bake for about 30 min... uncover & bake another 5mins.

Remove from the oven & let it cool for 10mins. 



What you add in your Frittata is completely up to you, personalize it!
 The steps & cooking time are still the same!

Bacon,egg & cheese muffins


Never leave the house hungry.. even during your morning rush!
Substitute the bacon for ham, turkey, tomato, avocado, canadian bacon.. etc.
 
RECIPE

1 english muffin (whole wheat, white, sour dough)
1 egg 
1 slice cheese (your fav)
2-3 slices of Bacon

Heat up a skillet, cook the bacon & set aside.  Clean pan & add a bit of butter, crack your 
egg & scramble. immediately form into a circle (the size of your muffin). 
Meanwhile toast your muffin. Once egg is cooked to your liking, remove and add to your toasted muffin, top with cheese & bacon. Wrap in foil for a 'TO-GO' breakfast or make more for the whole family.

Classic Deviled Eggs

I LOVE ME SOME DEVILED EGGS...


 RECIPE
12 Eggs
1/2 cup Mayo
2 tsp. red or white vinegar (I used red)
2 tsp. Mustard
2 pinches of Salt
Fresh cracked Pepper
Parsley for garnish

Place eggs in a pot and cover with enough water!
 Bring to a boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 15 minutes, then rinse under cold water continuously for 1 minute.
Crack egg shells and carefully peel under cool running water. Slice the eggs in half lengthwise, removing yolks & placing in a bowl. 
Place the whites on a serving platter. 
Mash the yolks into a fine crumble using a fork. 
Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.


I placed mixture in a ziplock bag, clipped the tip & evenly poured into each egg white!
 

Garnish each egg with a leaf of parsley! DONE!!

Huevos Rancheros

These are very simple to make & a breakfast favorite of mine. I believe my mom made a mistake teaching me how to make these... because I always want them!
 First off, use about 1 roma tomato per person... double, triple.. make for yourself or a large group!

RECIPE:
(made this for 2)

About 2 Roma Tomatoes (chopped)
Half of 1/4 of a small onion (chopped) 
(haha sorry, cut the onion in 4 & use 1/2 of one of those pieces) 
2 Tomatillos (chopped)
1 Yellow pepper (chile guero) chopped
or
2 Serrano peppers
* Leave steam & seeds on or remove them
2 tortilla's per person
2 eggs per person
Cheese (your choice) Ranchero, freso.. etc.

In a pot add 1 Tbsp of oil, saute onions (2mins), add peppers (1 min), & lastly add tomatoes and tomatillos.. cook until mixture comes to an even boil. With a masher press down on mixture until all chucks are smooth. Add in 1/2 Tbsp of Knolls chicken bouillon and stir. Turn heat off & taste to adjust seasonings.


In a large skillet, add 1 Tbsp of oil, fry tortillas until pliable about 1 min per side.
Next crack about 2 eggs at a time & cook 1-2 minutes per side.
Press excess oil from tortillas with a napkin, top with 1 egg & the sauce.... sprinkle with cheese!
Garnish with Cilantro
(This is the traditional recipe in our family, yes alot of frying going on.. but once in a while won't hurt)
